Fresh Cucumber Vegetable




Ingredients

Cucumbers
2 medium
Green chillies

Coriander finely chopped
1 tsp
Tamarind bits
½ tsp
Curry leaves
1 stalks
Tomato chopped
2 slices
Wheat flour
½ tsp
Coriander powder
½ tsp
Turmeric powder
¼ tsp
Chilli powder
¾ tsp
Asafoetida
3 to 4 pinches
Cumin & mustard seeds
¼ tsp
Salt
to taste 
Water
½ cup
Oil
1 tbsp


Cut cucumbers lengthwise in ½ " wide strips

Chop these strips into ½ " pieces.

Chop tomatoes too, slit green chillies, destalk curry leaves.

Dissolve chilli powder, coriander powder, turmeric and salt in the water

Heat oil in a heavy pan. Add seeds, allow to splutter. Add asafoetida.

Add chillies, curry leaves and tomatoes. Stir, add cucumber pieces.

Stir, add tamarind, cover and cook for 5 minutes.

Sprinkle coriander and flour, stir and simmer covered for 1 minute.

Take off fire, serve hot with phulka, roti or paratha.
