As the cooking takes time and patience, there are some short cuts, time savers or 'tips'.

  1. Always cut the onions immersed in water in order to prvent burning sensation and consequent oozing out tears from your eyes.
  2. Always soak rice in luke warm water with half a teaspoon of salt for 30 minutes before boiling. Many people prefer cooking without soaking but in that case the rice should be washed atleast 3 to 4 times with luke warm water.
  3. While cooking rice add a few drops of fresh lemon juice. It would help in keeping the grains firm and elongated.
  4. Always skim the frothy scum with a spoon while cooking rice, dal, etc. otherwise the scum will spoil the taste.
  5. Add half spoon of sugar to the fat like ghee and oil in which spices are browned to get rich brown coloureed gravy.
  6. Put the vegetables into luke warm water first, from the fridge, including lime for the best results.
  7. To prevent discolouring of brinjals,potatoes,banana,etc. while peeling and slicing, keep them immersed in water and add a pinch of salt to the water.
