Sauce soubise



Ingredients

Quantity
Butter
30gms
Refined flour
30gms
Milk
400ml
Onions
150gms
Pepper
a pinch
Salt
to taste 
Cream
2 tbsp


Chop onions finely and cook slowly in milk for 10 minutes. Melt the fat. Add flour and cook slightly without browning. Add milk and onions and stir till it boils. Cook slowly for 10 minutes. Strain through tammy cloth. Add cream and seasoning.
