When lettuce is several alone as a salad it is generally
called a French salad. The lettuce is washed and drained (not squeezed) and
just before serving, a French dressing is mixed with the lettuce. If the
dressing is added any length of time before serving, the vinegar in the
dressing will break down the fibres of the lettuce and it will become soft and
unappetizing.
