Put the rind and juice of lime, sugar, gelatine and water into a saucepan. Cover and bring to boil. Infuse for half an hour. Strain and cool. Whisk egg whites stiffly in a large bowl. Add the cool lime mixture slowly, whisking well. Whisk till it starts to set. Pour into a wet mould and turn out when set. Serve with custard sauce.


Custard sauce


Ingredients

Sugar

Salt
a pinch
5gms


Beat egg yolks. Add sugar and salt. Pour hot milk over. Stir well. Pour into a double boiler and cook till thick.
