Fried aubergine (Eggplant)













Ingredients

Aubergine
450gms
11kg
Oil to fry
30ml
500ml
Salt
to taste 
30 – 50ml
Pepper
a pinch
15gms


Cut the aubergine into thin roundels. Season and dredge them. Fry in smoking oil. Dish them on a napkin and serve immediately.
