Duchess potatoes

White pepper
a pinch

Peel and boil potatoes till tender. Strain and mash or sieve. Stir the fat into the sieved potatoes. Mix well; add beaten egg and milk. Add seasoning. Fill forcing bag and squeeze mixture out on to a greased baking sheet in the shape of roses or pyramids. Brush with beaten egg or melted butter. Bake in a quick oven till brown, at 205oC (400oF) or gas mark 6 for 10 minutes.
