Custard sauce (A) (with fresh eggs) (300ml) (10 portions)



Ingredients

Quantity
Milk
300ml
Castor sugar
30gms
Egg yolks
2
Vanilla essence
2 -3 drops


Mix egg yolks, sugar and essence in a basin. Whisk in boiled milk. Return to a thick-bottomed pan. Place on low heat and stir with a wooden spoon till it coats the back of the spoon. Do not boil. Pass through a fine strainer.

Serve with fruits, steamed or baked puddings.
