Wash the spinach thoroughly in cold water after removing any coarse leaves. Place in a saucepan with only the water adhering to the leaves after washing. Cook till tender. Drain. Chop and rub through a sieve. Add butter and seasoning.
N. B. Cream may be added instead of butter or a little flour may be mixed with the butter and added to the spinach.
