Coffee ice-cream















Ingredients

Quantity
Egg yolks

Cream
600ml
Coffee beans (roasted but not ground)
¼ lb (170gms)
Castor sugar
4 tbsp


Make the egg yolks and cream into a custard. Add to it the coffee beans and let it stand until they have flavoured the mixture well. Then strain it, add the sugar and when the custard is quite cold, freeze.
