Chocolate sauce (A) (300ml) (10 portions)



Ingredients

Quantity
Milk
300ml
Sugar
45gms
Butter
10gms
Chocolate (block)
30gms
         Or

Cocoa
15gms
Cornflour
15gms


Dilute cornflour and cocoa with a little a cold milk. Boil remaining milk. Pour gradually over cornflour mixture. Return to the pan. Stir till it starts to boil. Mix in the sugar and butter.

With chocolate:

Shred the chocolate. Add to the milk and proceed as above, omitting cocoa.

Serve with ice-cream, soufflés, puddings.
