Boiled ham (A)















Ingredients

Ham
Rasping (browned breadcrumbs)
Brown sugar


Soak ham for 12 hours. (24 hours if very salty). Clean and trim. Put into a pan with sufficient cold water to cover and simmer gently until tender – a little over an hour per kg. Remove from fire and let ham remain steeped in the water till cold (keep lid on). Remove and strip off the skin. Leave in refrigerator to set. Sprinkle with browned breadcrumbs and sugar.

N. B.      To ensure that the ham is sweet insert a sharp knife close to the bone. When withdrawn there should be no unpleasant smell.
