Baked ham














Ingredients

Ham
Refined flour
Brown sugar
Cloves


Soak ham in cold water for 12 hours. Wipe well and trim. Coat with a flour and water paste crust which must be sufficiently thick to keep the juice in. place the ham in an oven at 205oC (400oF) or gas mark 6 for 15 minutes. Reduce heat to 155oC (310oF) of gas mark 2 and cook till done (30 minutes per 450gms and 30 minutes over). Remove the crust and skin. Score squares in the fat and place a clove in each square sprinkling brown sugar over the fat. Decorate the knuckle with paper frill.
