Coriander powder
2 tsp (10gms)

Chilli powder
½ tsp (2gms)

Garam masala(mixture of  cardamom, cloves, cinnamon, caraway seeds and bay leaf)
1 ½ tsp (6gms)

Black pepper

Coriander leaves
1/8 bunch

Grind garlic and ginger. Fry chopped onions till nearly brown. Add garlic and ginger and mutton. Keep frying for 10 – 15 minutes, sprinkling a little water if desired. Add coriander powder, red chilli powder, cumin powder and salt. Fry for a further 10 minutes. Add chopped tomatoes and fry for a further 10 minutes. Add sufficient water and coriander leaves and simmer over very slow fire. When nearly done, add garam masala and pepper powder.

N. B.      This        mutton dish must be done on an extremely slow fire. Peeled quartered potatoes may be added half – way if desired.
