Peel and cut potatoes and pumpkin into 2.5cm (1”) cubes. Cut brinjals into even-sized pieces. Shell peas. Heat the fat. Fry red chillies broken into small pieces, and slit green chillies, mixed spices and curry leaves. Add vegetable are saute. Add sugar, salt and enough water to cook vegetables. Cover. Let it simmer till vegetables are tender and water is absorbed.
