Sieve flour, salt and pepper. Add
finely grated cheese. Beat egg yolks and add to dry ingredients. Mix well. Let
the mixture stands for at least ½ hour. Heat the oil. While oil is heating beat
egg whites stiff and fold into the mixture lightly but thoroughly. Put
teaspoonfuls of the mixture into the hot oil. Remove as they turn a light
golden brown colour. Drain on absorbent paper.
N. B. Do not allow to fry
too long or else the cheese balls become tough.
