Ø 1 egg
Ø 1 tblsp oil
Ø 4 tblsp groundnut oil
Ø 2 onions, finely chopped
Ø 2 garlic cloves crushed
Ø ½ tsp chilli pwd
Ø 250 gms cooked rice
Ø 225 gms cooked chicken or turkey meat, diced
Ø 200 gms peeled prawns, defrosted, if frozen
Ø 2 tblsp light soya sauce
Ø 1 tsp light brown sugar
Ø 1 tblsp lemon juice
Ø 200 gms cooked ham, very thinly sliced
Ø Black pepper and salt to taste
Beat the egg lightly with 1 tblsp water. Heat 1 tblsp oil and cook until set underneath. Turn over and cook on the other side. Slide the omelette out of the pan and cut into thin strips. Now add peanut oil to the pan and heat gently. Add the onions, garlic and chilli powder and fry until lightly browned. Add the rice and cook for a few seconds, then stir in the chicken and prawns.
Now mix in the soya sauce, sugar and lemon juice together, then stir into the rice-mixture. Stir in the ham, then season to taste with pepper.
Spoon the mixture into a serving bowl and garnish with the omelette strips. Serve 4 to 6.
Note : Nasi Goreng, which means ‘fried rice’ is extremely popular is South Eastern countries. It is served alone as a light snack, or an accompaniment to sate (Kababs).
