Nut roast

Ingredients	For 4	For 100
Mixed nuts	115gms	2.8kg
Egg	1	12
Butter	15gms	340gms
Breadcrumbs	30gms	680gms
Pepper	a pinch	15gms
Salt	to taste	100gms
Tomatoes	255gms	5.6kg
Onions	30gms	680gms
Lime rind	a little	3 – 4litre
Mixed herbs	½ tsp	15gms

Grind nuts. Chop onions and tomatoes. Heat butter, cook tomatoes and onions. Mix all ingredients. Bind with beaten egg. Bake for 40 – 50 minutes in a moderate oven, serve with tomato sauce.
