Cheese soufflé

Melt butter in pan. Add flour and cook for a few minutes. Do not allow it to brown. Add hot milk and cook till sauce thickens, stirring all the time. Remove and cool. Add grated cheese and seasoning and beaten egg yolks. Whip egg whites very stiffly and fold into the mixture. Pour into greased soufflé mould and bake in a hot oven at 205oC (400oF) for 15 to 20 minutes. Serve immediately.
