Bring the milk to a boil, remove from fire and drop the breadcrumbs gradually stirring vigorously with a wooden spoon. Beat well. Add seasoning and leave to cool, stirring occasionally. Add the cheese and well-beaten egg yolks. Lastly fold in stiffly beaten egg whites. Pour into deep fire-proof dishes and bake in a moderate oven till set.
