Potato toast












Ingredients

Potatoes
2.5kg
Bread
4 loaves or 80 slices  (450gms)
Eggs
6
Onions
250gms
Green chillies
60gms
Turmeric
1 level tsp
Coriander leaves
1 bunch
Lime juice
4
Salt
to taste

Peel and boil potatoes. Drain and dry on fire. Mash and cream.  Chop onions, green chillies and coriander leaves. Heat a little fat. Saute onions and green chillies. Add turmeric, creamed potatoes, chopped coriander leaves, lime juice and salt to taste. Spread mixture about 1.25 cm thick on bread slices. Brush over with beaten egg seasoned with salt. Fry in shallow fat. Brown both sides.
