Payasa or akki paramanna



















Ingredients

Quantity
Rice
1 kg 
Jaggery or sugar
1 ½  - 2 kg  
Coconut
1
Cardamoms
10gms
Cashewnuts
50gms
Nutmeg
a bit
Raisins
20 – 25gms
Water as required (approx 3 – 4 litre)


Boil in plenty of water till rice is soft, add jaggery, cashewnuts, raisins. Boil till it is moderately thick, take off the fire, add coconut milk and powdered cardamoms and nutmeg

N. B        In case sugar is used, coconut milk is not added; instead fresh milk is added.
