Break the eggs into a bowl. Season with pepper and salt.
Beat well with a fork or a whisk until yolks and whites are thoroughly combined
and no streaks of white can be seen. Heat the omelette pan. Wipe thoroughly
with a clean cloth. Add the fat. When fat melts add eggs mixture, moving the
mixture continuously with a fork until lightly set. Remove from heat. Half-fold
the mixture over at right angles to the handle. Gently lift out and serve in
the centre of a flat silver dish. Neaten shape if necessary and serve
immediately.
