Cut mutton into small cubes. Grind together ginger, garlic,
red chillies, cumin and salt. Mix mutton with ground paste and set aside for 1 ½
to 2 hours. Thread 8 to 9 pieces meat on skewers about 15 cm. (6”) long. Heat fat
and fry the skewered kababs slowly, turning them all the time until they become
brown. Serve hot.
