Water to make batter
|
|
Prepare a batter with salt, chilli powder, gram flour and
water to pouring consistency. Peel and cut pumpkin and potatoes into thin
slice. Break cauliflower into flowerettes. Cut onions into rings. Season with
salt and chilli powder. Slit ladies
fingers from the sides and season lightly. Dip in batter and fry in hot fat.
Serve hot with chutney.
N. B. Cauliflower
and potatoes may be parboiled first or they must be fried slowly. Double frying
the first time in medium fat and then in hot fat may also be done
