Urad Dal Ki Roti or Bhidhai

Soak dal overnight. Drain and grind coarsely. Heat the fat. Add gram, turmeric, coriander powder, ginger powder, chilli powder and salt. Fry for a few minutes. Cook with lid on, over gentle heat till gram is cooked. Stir well. Remove and cook. Mix with flour to make a stiff dough. Set aside for half an hour. Divide into small balls. Roll out into 1.25 cm (1/2”) thick chapaties and bake on a griddle over a very slow fire till it cooks through. Hold over live coal for a few minutes. Smear surface with clarified butter and prick with a fork to keep rotis soft. Repeat process.
