Tandoori Nan














Ingredients
For 40

Refined flour
2kg
Baking powder
3 level tbsp
Salt
1 heaped tbsp
Melted fat
100gms
Eggs
4
Milk
225gms
Curds
150ml
Sugar
1 level spoon
Gingelly seeds
30gms
Cold water to mix



Sieve flour. Mix salt and baking powder. Beat the eggs with sugar and milk and mix flour. Add cold water. Mix well. Make a smooth dough. Add melted fat and knead well. Add slat and curds and knead again. The dough should be very smooth. Keep aside for 1 hour. Divide into even sized balls. Brush over with melted fat. Rest for a further 15 to 20 minutes. Shape each portion with the hands thus. Smear top of nan with gingelly seeds and bake in the tandoor.
