Sukha dal (A)

Split black gram
225gms
5.6kg
Garlic
A few flakes
55gms
Green chillies
5gms (1 or 2)
115gms
Turmeric
a pinch
10gms
Cumin
a pinch
30gms
Salt
to taste

Wash and soak gram for 2 hrs. Drain. Heat the fat. Add sliced garlic, chopped green chillies, turmeric and cumin. Saute. Add gram. Fry for 5 – 10 minutes. Sprinkle water, cover and cook on a very slow fire till gram is cooked. Stir occasionally and sprinkle more water if necessary. (Use water in which gram was soaked.) When gram is cooked, add salt, stir and serve hot.
