Spicy Potato Puris

Boil peel and mash potatoes. Mix thoroughly with sieved flour, cumin, garam masala, chopped onion, coriander and salt. Add fat and mix well to form a dough adding a little water if necessary. Divide the dough into small balls and roll them out like ordinary puris but about0.75 cm. (1/4”) thick. Heat fat. When smoking hot, deep fry the puris until golden brown on both sides (as for puris A). Remove and drain on absorbent paper.
