Mooli stuffed Parathas

Whole wheat flour

Radish

Rub some fat into the flour, add salt. Add water and prepare a stiff dough. Divide into equal portions and form into balls. Roll out as for chapaties. Grate radish. Remove excess moisture if any. Season . Sprinkle seasoned radish on one round and cover with another; press down the edges. Cook as for plain parathas.

N.B.       Radish may be cut into cubes and cooked with salt but no water, over a  slow fire till tender and dry and then mashed for the filling. The helps to retain flavor.
