Clean, wash and soak rice for half an hour. Scrape and grind coconut; soak in part of stock. Heat fat, fry sliced onion till brown and crisp. Remove. Add spices, drained rice, turmeric and fry. Add hot stock, coconut milk and salt. Cook till rice is tender. Serve hot garnished with fried onion.
