Sweet and sour Vegetables














Ø  4 slice canned pineapple
Ø  3 capsicum
Ø  1 large sized onion
Ø  1 cucumber
Ø  4 carrots
Ø  4 stalks of celery
Ø  3 flakes garlic
Ø  1 inch long piece of ginger
Ø  3 tblsps vinegar
Ø  One cup vegetable stock
Ø  3 tblsps corn flour
Ø  3 tsps soya sauce
Ø  3 tomatoes and oil to fry

Cut the pineapple and onions into large pieces, halve cucumber and slice it and cut capsicum and celery in a slanting way. Now mince ginger and cut each tomato into four quarters. Now rub in 1 tsp of salt into the vegetables and keep them aside for 45 mts. Now take vinegar, sugar, soya sauce, stock and corn flour and cook the whole mixture till it is thick.

Now heat oil. Fry ginger, garlic and slip in all the vegetables barring tomatoes and saute. Now put in the above sauce and pineapple bits and cook until they blend well. Now mix in tomatoes and remove from flame. Serve with noodles or rice or as it is. Serve 4.
