Ø A large handful of plain noodles
Ø Oil for frying
Ø 3 capsicums
Ø 250 gms soft white cabbage
Ø 4 green chillies
Ø 4 flakes of garlic
Ø 1 inch long piece of ginger
Ø 4 spring of onions
Ø 3 tsp soya sauce
Ø 1 ½ tsps sugar
Ø Salt to taste
Ø A pinch of ajinomoto
Boil the noodles in water to make them tender. Then drain and dry out thoroughly. Now heat half of the oil at a time and braise (cook by simmer in a closed vessel) the noodles in batches over medium flame, turning them swiftly. Normally each batch would take 4 to 5 mts for being properly done.
Now seed the capsicum and remove membranes and cut them into large strips. Now mince garlic, ginger, chilli, onion and cabbage to fine pieces. Heat the oil and stir. Fry all these ingredients on high flame for 4 mts. Now sprinkle ajinomoto. Add soya sauce, sugar, salt and stir and cook for 2 mts
Now put the noodles in a serving bowl, garnish it with capsicum shrods-mixture and serve hot. Normally all these Chinese dishes lose their taste and quality when cold. Serve them not only hot but at once after preparing them.
