Pork Salad Quick Fry















Ø  225 gms pork tenderloin
Ø  1 tsp dry sherry
Ø  1 ½ tsp salt
Ø  1 tsp corn flour
Ø  ½ tsp grated fresh root ginger
Ø  4 tblsps oil
Ø  1 leek, thinly sliced
Ø  1 small red pepper, seeded and sliced
Ø  100 gms beansprouts

Cut the pork into thin strips and place in a dish. Sprinkle over the sherry, salt, corn flour and ginger. Cover and leave for 30 mts.

Now heat the oil in a wok or frying pan. Add the pork and fry over high flame for 2 mts. Add the leek and fry 1 minute. Add the red pepper and fry for 1 minute. Then stir in the beansprouts. Serve at once. Serve 4.
