Mamak- Paras

Ø  600 gms maida (refined flour)
Ø  2 cups of oil
Ø  1 tsp pepper, ground
Ø  2 tblsp ghee
Ø  2 tblsp cumin seeds
Ø  Salt to taste


Rub ghee into maida. Mix pepper, salt and cumin seeds. Knead the mixture into a stiff dough by adding required quantity of water. Now divide the dough into three equal parts and roll out on a pastry board, a part at a time to ¼ inch thickness. Cut into diamond shapes pieces. Heat fat and deep fry till light brown. Serve with pickles and chutney.
