Ø 4 eggs
Ø 2 tblsps grated cheese
Ø 4 green chillies, chopped
Ø 1 tsp coriander fresh leaves, chopped
Ø Butter or ghee for frying
Ø Salt to taste
Break and beat the eggs till they turn fluffy and their volume is doubled. Add to it the grated cheese, chopped green chillies and the chopped coriander leaves. Mix the whole lot well, then add salt. Heat ghee or butter in a pan, pour the egg mixture, cook at low temperature. When both the sides are well cooked, fold the omelette and serve hot with tomato ketchup.
The same dish can be prepared with a variety of alterations. For example you can also use a tblsp of grated and sauted mushroom instead of cheese.
