Ø 8 eggs
Ø 1 medium sized pod of garlic, minced
Ø 750 gms spinach or palak
Ø 4 onions, small sized, minced
Ø 4 green chillies
Ø 4 large tomatoes, sliced
Ø 2 tblsp coconut grated
Ø 4 tblsp ghee or butter
Ø Salt to taste
First of all, prepare omelettes with the eggs. Cut the omelettes into 1” small cubes. Mince the spinach finely after thoroughly cleaning it. Cook the spinach over low flame for 10 mts, with a little bit of salt. When spinach is quite tender, grind the whole lot to a very fine paste. Now fry onions, ginger, garlic in ghee or fat to a light brown colour. Now add to spinach paste, sliced tomatoes, fried onions and other ingredients. Cook all of these together for 10 mts on low flame till the gravy become semi-liquid.
Now throw in omelette cubes and again cook for five minutes on low flame. Serve it hot, garnished with grated coconut or tomato, onion slices. The curry goes well with rice or chapattis.
