Ø 250 gms, beef fillet
Ø 3 slices fresh roof ginger, cut into slivers ( long thin piece)
Ø 1 spring onion, sliced
Ø 1 small chilli, seeded and sliced
Ø 2 small red or green peppers, seeded and sliced
Ø 1 tsp sugar
For the marinade:
Ø 3 tblsp soya sauce
Ø 2 tsp white wine
Ø 3 tsps corn flour
Ø 4 tblsp oil
Trim any fat from the beef then cut the meat into thin strips about 1 inch long.
To make the marinade, do the following operations
Mix the soya sauce, wine and corn flour with 1 tblsp oil and one tsp water in a shallow dish. Stir in the beef, cover and leave to marinate for 1 hour.
Heat the remaining oil in a wok or frying pan. Add the beef and fry over high flame for 15 seconds. Remove from the pan with a slotted spoon and keep aside.
Now add ginger, onion and chilli and fry for a few seconds. Add the pepper and fry for 2 minutes.
Return the beef to the pan, add the salt and sugar and fry for a few minutes more until the meat is tender and well cooked. Serve 3.
