Ø 250 gms lean beef, trimmed
Ø 3 garlic cloves, crushed
Ø 3 slices fresh root ginger cut into slivers
Ø 350 gms mixed vegetables, sliced
For the marinade:
Ø ½ tsp soda bicarbonate
Ø 250 gms corn flour
Ø 1 tblsp soya sauce
Ø 20 ml oil
Ø 2 tsps caster sugar
For the sauce:
Ø ½ tsp corn flour
Ø 1 tsp sugar
Ø 1 tsp salt
Ø 50 ml white wine
Ø 85 ml chicken stock
Ø 120 ml Oyster sauce
Cut the beef into thin slices.
To prepare the marinade:
Mix the corn flour, soya sauce, 1 tblsp oil, sugar and 85 ml water in a shallow dish. Stir in the beef, cover and leave to marinate for thirty minutes.
To prepare the sauce:
Mix the corn flour, sugar and salt and then stir in the wine, stock and oyster sauce. Heat the remaining oil in a wok or frying pan. Add beef and fry over high flame for 20 seconds. Remove from pan with a slotted spoon and keep it aside.
Now add garlic, ginger and vegetables and fry until tender but still crisp. Return the beef to the pan. Pour in the sauce and cook, while stirring all the time. Serve at once. Serve 3 to 4.
