Ingredients
- 4 Bunches of methi ( fenugreek)
- 6 medium sized potatoes, peeled and sliced
- 8 cloves garlic chopped
- 1/2 tsp. of mustard seeds
- 4 tomatoes chopped & onion chopped
- 4 green chillies minced
- 1/2 tsp. each turmeric powder & chilli powder
- 4 tsp. of ghee or oil, salt to taste.
Heat ghee and fry mustard seeds till they stop popping. Add onions,garlic,green chillies, tomatoes and cook for two minutes. Add turmeric and chilli powder and cook for two minutes. Now add aaloo and methi, and cover to cook it on medium flame till methi aaloo is done. Continue stirring occassionally and sprinkle some water if need be. Take off the flame and serve hot. Add overnight soaked moong daal with the methi leaves to enhance the taste further. But it is purely a matter of individual choice.
