Medium size firm but ripe bananas

Peel the bananas and slice into quarters on the diagonal. Fill a
large skillet with oil to a depth of 1 inch. Heat until it is hot but not
smoking. Fry the bananas until golden brown on all sides. Drain on paper towels
and serve immediately.
Serve with raita and chutney, pickles, etc.
