Fresh Mango Chutney




Ingredients

Diced mango
2 cups
Chinese preserved black – beans, rinsed 
¼ cup
Green onions – thinly sliced
¼ cup
Diced red onions
¼ cup
Grated ginger
2 tbsp
Red jalapeno peppers – thinly sliced

Small sweet red peppers – diced
1
Oregano – chopped, fresh – zest of juice of lime and orange juice
½ cup
Rice wine vinegar
¼ cup
Light olive oil
1 cup
Toasted cumin seeds
1 tbsp


Mix together all ingredients; adjust seasoning with salt and citrus. Let sit for a few hours before serving.
