Castor sugar

Egg yolks

Mixed candied peel
115gms
Mixed chopped nuts
55gms
Orange juice
1 tbsp
Lemon juice
1 tsp


Cream egg yolks and sugar. Add boiling milk and cook till custard is quite thick (cook in a double boiler). Pass through a sieve and set in the freezer (keep refrigerator at coldest). As it starts to set take out. Pour into a chilled mould and beat till stiff gradually adding cream, fruit juice and chopped nuts and peel.
