Make a thisk Beatnaise sauce combine with a reduction of
tomato puree and tomato concassee to colour slightly.
When
serving the sauce – usually on top of a grilled steak – decorate with a thin
spiral of meat glaze.
Serve with grilled
poultry and meat.
