Salad dressing (A) (150ml) (5 – 8 portions)



Ingredients

Quantity
Eggs (hard-boiled)

Castor sugar
1 tsp
Mustard
¼ tsp
Salt
¼ tsp
Vinegar (white)
3 tbsp (45ml)
Cream or evaporated milk
150ml


Rub egg yolks through a sieve. Add seasoning and mix well together. Moisten with vinegar and work till smooth. Add gradually and carefully, cream or milk.
