Robert sauce (sauce robert) (300ml) (10 portions)



Ingredients

Margarine
15gms
Vinegar
75ml
Demiglace
300ml
Mustard
1 tsp
Castor sugar
¼ tsp


Melt the margarine in a small pan. Add finely chopped onion. Cook gently without discolouring. Add vinegar and reduce completely. Add the demiglace. Simmer for 5 to 10 minutes. Remove from heat and add mustard mixed with a little water and sugar. Skim and check for seasoning.
