Put vinegar and shallots in a small pan and reduce by leaf.
Add demiglace. Simmer for 15 to 20 minutes. Add the rest of the ingredients.
Skim and correct seasoning.
Serve with pork, duck,
brown entrees, Durham cutlet, etc.
