Piquant sauce (300ml) (10 portions)



Ingredients

Shallots (chopped)

Demiglace
300ml
Gherkins (chopped)
30gms
Vinegar
75ml
Capers (chopped)
15gms
Parsley(chopped)
1 tsp


Put vinegar and shallots in a small pan and reduce by leaf. Add demiglace. Simmer for 15 to 20 minutes. Add the rest of the ingredients. Skim and correct seasoning.

Serve with pork, duck, brown entrees, Durham cutlet, etc.
