Plum pudding

Finely chopped suet or margarine

Mixed spice

Sultanas

Currants o black raisins

Mixed peel

Almonds or cashewnuts
30gms
Lemon (rind and juice)

Valencia raisins

Brandy (optional)

Put flour and breadcrumbs into a basin. Add all the dry ingredients and well-beaten eggs and beat the mixture to a stiff consistency. Put into a well-beaten pudding mould. Press down and steam for 4-6 hours. Steam again for 2 hours before serving. Serve with custard sauce or rum butter.
