Mix egg yolk with sugar, mustard and pepper. Cream well. Add
salad oil drop by drop. Keep beating vigorously with a wooden spoon all the
time. As sauce gets thicker moisten slightly with vinegar. Keep adding salad
oil and keep beating. Taste for seasoning and add lime juice. Mix well.
N. B. remedy for curdled mixture is to whisk a
fresh egg yolks slowly into the mixture.
A basic sauce with
many uses. Served with cold fish, poultry, eggs and vegetables.
