Devilled sauce (Sauce diable) (300ml) (10 portions)



Ingredients

Shallots or onion (chopped)
55gms
Mignonette pepper
10gms
White wine
30ml
Vinegar (white)
40ml
Cayenne pepper
a large pinch
Demiglace
300ml


Mix together the chopped onion, Mignonette pepper, wine and vinegar. Reduce by half. Add the demiglace. Simmer 5 to 10 minutes. Season liberally with cayenne pepper. Pass through a fine muslin. Serve with grilled or fried fish or meats.

Serve with grilled or fried fish and meats.
