Demiglace

300ml

Mix together the chopped onion, Mignonette pepper, wine and
vinegar. Reduce by half. Add the demiglace. Simmer 5 to 10 minutes. Season
liberally with cayenne pepper. Pass through a fine muslin. Serve with grilled
or fried fish or meats.
